Sake

(Sake (Japanese: 酒) is the Western name for a Japanese alcoholic beverage brewed from polished rice. In Japanese, the drink is called nihonshu (Japanese: 日本酒?, Nihonshū); the word sake is used in Japanese for any alcoholic beverage.

Sake can be compared to a wine, but the production method is more similar to beer brewing.

Grades of quality

Sake is divided into the simpler futsū-shu (普通酒) and the finer tokutei meishōshu (特别名取名酒). The latter is classified into four grades:

  • Honjōzō-shu (本醸造酒), with one ounce of alcohol added
  • Junmai-shu (純米酒), with no added alcohol and with 40% of the rice weight polished off.
  • Ginjō-shu (吟醸酒), with no added alcohol and with 50% of the rice weight polished off.
  • Daiginjō-shu (大吟醸酒), with no added alcohol and with 60% of the rice weight polished off.
